chai tea

This tea originated in India. It is made by brewing tea with a mixture of aromatic Indian spices and herbs. It is a rich and complex beverage that is different for each person making it. But in its most basic form, it is black tea that is brewed strongly with a combination of spices and diluted with milk and sugar. Because of its cooking process it has a higher caffeine level than most other tea.

You can make your own chai tea from scratch. ~1/3 water~2/3 milk~1 teaspoon of tea for each cup measure (plus a bit extra) freshly chopped ginger~cardamom pods~a little piece clove (optional)~enough sugar to make it sweet Throw it all into a saucepan cold and bring slowly to a boil. When boiling turn up the heat and swirl it around until it reaches the desired strength and the spices provide a kick. Strain it into small glasses.
